研究領域:食品生物技術
(1)酶與發酵工程:新型食品酶發掘、基因的克隆和表達、酶製劑的發酵生產、純化、性質和應用;
(2)新酶的結構解析及分子改造:如新型葡聚糖酶、酯酶、幾丁質酶、蛋白酶等;
(3)食品營養與功能研究:利用生物技術製備功能性食品原料並進行功能評價,如功能性低聚糖及活性肽等;
(4)食品加工方向:低聚糖的生產和功能、傳統食品工業化和糧油加工等。 [1]
