劉志剛研究方向

主要從事食品營養與人類健康研究方向,包括:
1. 食品營養功能組分發掘與功效評價:結合我國特色食材資源和全民營養健康現狀,發掘果蔬、糧油等傳統食品原料中具有調節代謝、改善腦健康問題(情緒、社交、認知功能障礙等)等生理功能的可溶性膳食纖維、多酚和類胡蘿蔔素類功能成分;
2. 新型膳食模式對代謝綜合徵及神經退行性疾病的干預作用機制:利用多組學系統生物學研究方法探究限制性飲食模式對肥胖、糖尿病等代謝性疾病,以及衰老相關的阿爾茲海默症、帕金森症等神經退行性疾病的改善作用,揭示間歇性禁食、植物蛋白飲食、特殊氨基酸限制飲食通過調節“腸-肝-腦”軸調節機體微生態免疫平衡、干預系統性胰島素抵抗、改善與衰老相關的中樞神經系統功能紊亂的分子機制。 [1] 

劉志剛學術成果

研究發現了高脂高果糖等不合理膳食模式會誘導腦部胰島素抵抗認知功能障礙,並嘗試探索了通過改變膳食結構和營養組分,干預由於遺傳、衰老、不合理飲食、社會壓力等因素引起的認知記憶功能紊亂及情緒變化。近年來在食品營養及生物化學領域共發表論文五十餘篇,主要成果發表在食品營養與生物化學領域等具有國際影響力的期刊上,論文總引次數超過800餘次,H-index 17,i10index 25。其中ESI前1%高被引論文3篇,封面文章1篇,參編英文專著1部。
近5年來主持包括國家自然科學基金面上項目、青年項目、陝西省重點研發計劃、中國博士後特別資助、企業橫向課題等科研項目10餘項,榮獲2018年陝西省科學技術進步獎二等獎(排名第二)及陝西省高等學校科學技術一等獎(排名第二)。目前任Frontiers in Aging Neuroscience審稿編輯,Free radical biology & medicine, Journal of Agricultural and Food Chemistry, Journal of Nutrition, Journal of Functional Foods等食品營養學雜誌審稿人。美國營養學會、歐洲自由基研究學會會員。多次受邀參與多個國際重要學術會議,包括美國營養學會(American Societyof Nutrition)、美國加州自由基協會(Oxygen California Club)以及戈登會議(Gordon Research Seminar & Gordon Research Conference)、國際脂質科學與健康研討會等國際會議並做學術報告。 [1]
